ABOUT AVPN
AVPN (Associazione Verace Pizza Napoletana) was founded in 1984, supported by the Chamber of Commerce, Handicrats & Industry. The Vera Pizza Napoletana Brand, internationally registered by AVPN, certifies that the pizzeria realizes an excellent product of Neapolitan tradition, according with the international AVPN disciplinary.
THE DOUGH
The official requirements of Vera Pizza Napoletana begins with the crust. The dough is made fresh daily with just water, sea salt, compressed yeast, biologically produced and wheat flour type "00" and is left to proof for at least 8 hours.
Pizza Base
The base is exclusively prepared by hand. This technique moves the air from the centre outwards so that the edge stays more puffy and will form the crust with the cooking.
INGREDIENTS
Vera Pizza Napoletana is garnished with top quality all natural fresh ingredients from Campania regions and the pizza makers are strictly following the codified rules in order to achieve the required authenticity.
Wood-Fired Oven
The cooking is done exclusively in a wood-fired oven, which has reached a temperature of 905F (485C°). With these temperatures, the pizza is done within 60-90 seconds and will cook evenly across the entire circumference.
